Grilled Watermelon Salad with Champagne Vinaigrette

Celebrate all the flavors of summer with this recipe for a multi-textured, refreshing salad featuring grilled watermelon dressed with Girard’s® Champagne Dressing.
Place almonds in a small nonstick skillet over medium-high heat and toast, stirring occasionally, until almonds are fragrant and golden, about 3-4 minutes. Cool, roughly chop and set aside.
Cut watermelon into 1”-thick slices. Brush each side of slices with 1 teaspoon olive oil. In a grill pan, or on the grill, cook watermelon at medium-high heat until char lines develop, about 2 minutes each side. Remove from heat and chop into large chunks, discarding rind.
In large bowl, combine red onion, arugula, basil and mint.
Add watermelon, feta, and dressing and gently toss to combine.
Serve warm or chilled, topped with chopped, toasted almonds.
